I love scrambled eggs as well. A friend prepares them like you do mel, and she says they are always fluffy. I used to have a microwave but don’t have one. Still debating whether I should get another….

Just reading through this thread has made me pretty damn hungry!!!
Quick meal ideas I do include mi-goreng, vegemite toast, toasted turkish bread and dips (someone introduced me to a basil and cashew one and I’m hooked), flavoured tofu (sweet chilli) with steamed broccoli…..and when I’m really wanting something a little decadent, I go toasted sandwiches with antipasto and slices of Jarlsberg cheese…
Geez, I’m tempted to fix up a toasted sandwich right now!

I used to make something very similar Shull, I would saute some sliced carrot thinly and onion, then add water for noodles with some chicken stock or stockcube, then add the noodles and lastly sliced bokchoy or spinach..(sometimes add an egg as well)so it was a very quick noodle soup
But I can’t go past simple baked beans on toast, cheap easy, great source of protein!
I sometimes make them a bit more interesting by first frying some sliced onion and red capsicum til cooked then add beans and heat and serve with toast and shredded lettuce. tabasco and sour cream for a mexican flavour -

I usually just have noodles, super slack I know but those MiGoreng Asian style noodles are just my favourite, I never get sick of them. I sometimes have them with a poached egg on top, like on the packet, or sometimes I leave the liquid in and add lettuce, cucumber, shallots, bean shoots and herbs or possibly some left over meat like chicken or streak, shredded, sounds weird but its yummo 🙂 I also like to make fritattas or omelettes because I can use up left over veges or if I don’t have any I have just fried up some potatoes and onions and then added the egg mixture, its really filling and sometimes even add bacon if I feel like meat. I love platters too like some of the others mentioned, I have salami, cheese (you could leave that out) olives, pickled onions, gherkins, carrot and celery sticks, some sort of dip and crackers. It is ideal if you want to sit in front of the TV and watch movies plus all the ingredients come in handy for snacks any time. I like to make homemade pizzas on english muffins or pita bread if I am in a hurry, grilled marinated chicken with rice, baked sausages with mashed veges, pumpkin soup (about the fastest soup you can make, my kids use to love it when they were babies) Quick stir frys, you can get the veges already cut up in the fresh veges section, and meat already sliced for you so all you need is to make up a sauce, or even buy a ready made one too, fora fast healthy meal. Tacos, nachos or burritos are good, especially if you happen to have left over spaghetti sauce. I will probably think of more but can’t think too well this time of night, lol.
I will have to try my migoreng like you have. It’s the best 2 minute noodle isn’t it! Much better than maggi haha

I’m all about the ‘quickies’ lol
One of my faves is ….flavoured tofu e.g. honey soy, brocollini, little bit of onion and chick peas. Sounds boring but is very healthy and actually quite yummy! You can use plain tofu and flavour with tamari, oyster sauce, etc
Great to team back with grilled chicken or fish where time permits 🙂
Chop everything up, bung it in a pan with a cup of (natural!!) stock and cook for about 7- 10 mins
