Duck eggs, how best to use them?

Hi Beauties, yesterday I went to visit my aunt and she gave me some duck eggs.
As it is I’ve never comsumed duck eggs before and don’t know what is the best way to have them.
I’m thinking of using them in a cake but if there is any other recipe or use for them please let me know 🙂

Hi ladies. I’ve used a few of the eggs in a yogurt cake and it was delicious. Think I might make another one 🙂

I heard that duck eggs made really good sponge cakes.
Don’t know if its an ‘old wives’ tale

I made fried rice and used the duck eggs as the omlette park. The fried rice flavour over powered the slightly stronger egg flavour. Hubby ate 3/4 of his without saying anything then i told him they were duck eggs and he was like yuck…i thought the egg tasted funny, then picked the rest out…shouldnt have said anything and he would have happily eaten the lot!!

I then used some to bake a cake and your couldn’t tell the difference. Because they are so big, I think the recipe asked for 3 eggs so i used 1 duck and 1 chicken.

My ex hubby used to love duck eggs. His parents bred ducks so we did see a few eggs come our way. They are much bigger than a normal chook egg.
Personally for me, I didn’t like them, they smell awful. Ex hubby loved them poached and fried. I know that I tried to make a cake with them once and it took forever to cook and then turned out really heavy. I since learnt that if you cook with a duck egg, you have to cut down the butter by 10-20g.
What also turned me off apart from the smell is that duck eggs are higher in fat.
If you do cook with them 1 duck egg = 2 chook eggs. For me, I pegged that on a 60g egg.
I did try a few ways of cooking them……definitely not good for a pavlova.ewwwwwww.
Omelettes were good but I still didn’t eat them. Once you get past the smell I couldn’t take to the richer taste of them.
Best to google for some recipes. I know a g.f. cooks alot of duck meat and uses the site
