What have you been eating and loving?

As per title, what have you been eating and loving lately? This week I got back into my green smoothies, I had forgotten how good they are! I will have one for any meal- my secret weapon is pineapple! I also put in spinach, blueberry, banana, strawberries and coconut water. Right now I have one that also has kale, an egg and some milk to make it smoother and creamier.

In less healthy news I am so enjoying eating bubbles for dinner on a Friday. Dip, crackers, cheese cubes, triple cream brie and kabana intentionally ruining out appetites hehehe

    I just love a chicken snitty – crumbed with panko breadcrumbs and parmesan cheese. I pan fry to seal then continue cooking on an oven tray till its crisp and not greasy at all.
    I serve with a giant fresh salad with Roma tomatoes bocconcini, avocado and balsamic. I just love and so does my family.

    Salads!

    I cube some veggies (sweet potato, zucchini, capsicum, carrot, whatever you have) and roast them, I cook some frekkah or pearl cous cous in some stock, once they have cooled I add baby spinach, cherry tomatoes, cucumber, olives, (whatever you like) and mix it all with some balsamic vinegar, so filling.
    Last night I had it for dinner with BBQ Chicken and Persian Fetta also added.

    My go-to lunch at work recently has been a concoction of mine that is SO filling and super delicious.

    I smash avocado with some finely chopped shallots and a squeeze of lime then spread that onto a toasted rye roll, top it with chopped cherry tomatoes and a sprinkle of Danish feta. Then on top of that I sprinkle a little balsamic vinegar.

    Delish!

    Simply put… A whole heap of mangoes and cherries 🙂 nothing fancy, just fresh fruit. I’ve been having 2 mangoes a day and a medium bowl of cherries. Yum yum.

    It’s costing me an arm and a leg to fund my fruit addiction!

    Chocolate coated popcorn!! I can’t believe I didn’t discover this earlier!

    On a healthier note, avocado, spinach and tomato toasties with a sprinkle of pepper are so good!

    I got on the Vegemite bandwagon! It only took me 14 years! I assumed I wouldn’t like it, so never tried it, but then I did – Vegemite and butter on toast with some avocado is my new put a smile on my face brekky! 🙂
