How-to: make immune boosting soup
Winter is a great time of year to enjoy the benefits of homemade soup. Combine your favourite veggies and herbs for an immune boosting soup that’ll really pack an heart-warming punch.
Making soup is not rocket science, simply consider which flavour combinations you like the taste of and bulk the recipe out with a few extra light-flavoured veggies like celery and zucchini. Homemade soups make healthy eating easy as not only can you be 100 per cent sure that you’re avoiding the additives contained in processed and pre-packaged foods, you can specify beneficial ingredients to tailor the soup to your specific health needs.
To get you on your way, here is an immune boosting soup recipe we’ve prepared for you:
2 carrots peeled and chopped in to cubes
1 leek washed and sliced
2 small-medium onions chopped into small pieces
1-2 stalks of celery washes and chopped in cubes
1 dried bay leaf (a good source of vitamin A and E)
1-2 sprigs of fresh thyme (an excellent source of iron and calcium)
1-2 cloves of garlic (a natural antibiotic with powerful antioxidant benefits)
1 pinch of fennel (good for the digestive system)
Lightly fry the onion and garlic
Add the herbs and stir for a minute or two to release the flavour
Add the vegetables
Add about a litre of water
Bring to the boil
Cover and simmer for 15-20 minutes until all the vegetables are soft
Blitz with a blender
Serve with some freshly chopped coriander or parsley on top.
