Orange, carrot and almond cake recipe

‘Healthy’ and ‘cake’ don’t usually go together, do they?

But this one is packed with nourishing wholefoods, just ask the chef – nutritionist Jacqueline Alwill. She’s shared her delicious recipe with us in the video above as part of Jurlique Wellness Month, to help you improve your overall wellness and skin health.

Made with oranges, almond meal, carrot and coconut sugar, a slice of this will not only send your tastebuds soaring, but provide your body with the nutrients it craves.

METHOD:

#1 Boil two whole oranges for two hours and then drain.

#2 Once cool, puree.

#3 Add six eggs and 1 ⅔ cups of coconut sugar into a food processor/mixer and blitz.

#4 Then, add the pureed orange, 2 ¼ cups of almond meal, a grated carrot and 1 tsp baking powder to the mix.

#5 Mix all ingredients together, then place into a baking tin and bake at 160 degrees for one hour and 15 minutes.

#6 Once the cake has cooled, spread one cup of yoghurt over as icing.

#7 Decorate with orange segments, pomegranate seeds and calendula (or edible flowers).
